I’ve been eating super healthy lately. I’m eating a plant based diet with 1-2 days of meat eating during the week. But the less I eat meat, the less I want to eat it. Even bacon sounds disgusting. Strange, I know. I also have cut majorly processed foods from my diet as well. I post pictures daily of what I’m eating. Part of it is to keep myself accountable, but part of it is to share that eating healthy is fun and it’s the best thing you can do for yourself! I’ve had several requests to share this salad (and other recipes) so today, I’m obliging with Kale Salad. Now, to be honest. I’m not a huge lover of kale. But the good outweighs the bad with this leafy green. It’s so incredibly good for me that I eat it anyway. I want those nutrients and vitamins! :) This particular salad is actually very good! And it’s super simple too! Bonus!
Kale (as much as you want)
1 Avocado
1 Lemon
Salt & Pepper to taste
Cut up the kale. Throw it in your bowl. Cut your avocado in half, remove seed and skin. Put avocado on top of kale and “dredge” the avocado. You’re mixing the avocado in with the kale with your hands. Grab kale and avocado and just mix it all up well until the kale is coated in the avocado and it’s oils. (basically, you’re grabbing fistfuls of kale and avocado together and squeezing… does this make sense?) Next add the juice of one lemon and salt and pepper. Mix with your hands again. And that is it! You’re ready to enjoy a tasty Kale Salad! (how super easy was that?!)
Serve a heaping amount next to some homemade black bean enchiladas! mmmmm!

Sounds good. is kale bitter raw? Have u made kale chips?? So yummy! Just cut up in squares toss with olive oil and sea salt and bake for 10 min.
